2 H-E-B Large Grade AA Eggs, reserve 1 egg white lightly beaten
3/4 cup(s) light brown sugar
1 cup(s) H‑E‑B Texas Wildflower Honey
3 cup(s) H-E-B Select Ingredients Baker's Scoop Unbleached All Purpose Flour
1/2 Tsp Hill Country Fare Baking Soda
3 Tsp McCormick Pumpkin Pie Spice
1 Tsp McCormick Ground Nutmeg
9 Tbsp Candied Fruit Acitron, finely chopped, reserve 1 Tbsp
1 Tbsp lemon(s), juiced
1 1/2 cup(s) H-E-B Confectioners Powdered Sugar, sifted

Instructions

Preheat oven to 400°F.

In a large bowl, beat egg, brown sugar and honey; add flour, baking soda, pumpkin pie spice and nutmeg, then stir in candied citron; cover and chill 2 hours.

Grease cookie sheets, then roll dough into 2-inch balls and place on cookie sheet; flatten to 1/2-inch thickness, leaving 1 1/2 inches between cookies; bake 10 minutes until firm.

To make glaze, stir together egg white, lemon juice and candied citron; mix in confectioner's sugar until smooth.

While still warm, brush cookies with glaze.
