Recipe makes 8 Servings

1 1/2 Lb gold potatoes, halved or cubed if large
1/2 Lb russet potatoes, peeled and cubed
1 Tsp kosher salt
1/2 Tsp black pepper, freshly ground
2 Tsp fresh garlic, finely minced
3 cup(s) chicken stock
8 Oz H-E-B Neufchâtel Cream Cheese, cubed
4 Tbsp salted butter, cubed

Instructions

Add potatoes, salt, pepper, garlic and stock to pot. Set on "manual" setting and set timer to 18 minutes.

After cook time is done allow to release pressure naturally for 5 minutes. After 5 minutes, release with venting valve.

Mash potatoes together with cream cheese and butter. Add more broth if needed to get desired consistency. Adjust seasoning with salt and pepper as needed.
