Recipe makes 4 Servings

2 cup(s) mixed greens
1 cup(s) cucumber, diced
1 medium avocado, peeled and chopped
1/2 cup(s) red onion, thinly sliced
1 Tbsp lemon, juiced
2 Tbsp olive oil
1 medium ripe tomato, cut in half and then sliced
4 whole wheat hot dog buns
4 Tofurkey Hot Dogs, prepared according to package directions

In a small bowl, combine mixed greens, cucumber, avocado and red onion with lemon juice and olive oil. Set aside.

Open buns, layer in a couple sliced tomatoes and prepared hot dog.
