Recipe makes 4 Servings

1 large cucumber
1 apple corer
1/2 large avocado
1 Tbsp mayonnaise
2/3 cup(s) Mama Tang's Sweet Asian Vinaigrette
6 Oz H-E-B Albacore Tuna In Water, drained
1 cup(s) Nishiki Cooked Rice

Instructions

Choose a long cucumber. Wash and dry then cut into approximately 3-inch chunks.

Use an apple corer to carve out a hole in the middle of each chunk. You can make this small and use less filling, or wider to use more.

In a medium bowl, mix avocado, mayo, and Mama Tang's until blended. Add tuna and cooked rice, mix well.

Fill the hole in each cucumber chunk with tuna mixture. Cut the chunks into 1-inch slices.

Serve with Mama Tang's sauce for dipping. Recipe can be made with Mama Tang's Spicy Asian Vinaigrette if desired.
