1 1/2 Lb Hill Country Fare Boneless Skinless Chicken Thighs
1 Tsp kosher salt, plus more as needed
1 Tsp cracked black pepper, plus more as needed
2 Naan bread, cut into 3 to 4 inch squares
1 English cucumber, sliced thin
12 Oz H-E-B Mild Pico de Gallo

Pre-heat a cast iron skillet over medium high.

Season chicken thighs with salt and pepper.

Add oil to pan and sear chicken thighs 6 to 7 minutes before flipping to ensure thighs get crispy.

Finish cooking until internal temperature reaches 170˚F.

Place flatbread squares in oven for 10 to 15 minutes to just heat through.

Then chop chicken into strips.

To assemble, spread a little black bean hummus (recipe on HEB.com) on flatbread squares, and top with chicken, cucumber slices and pico de gallo.
