Creamy Truffle Potato Soup

Recipe makes 6 Servings

4 medium russet potatoes, peeled
4 Tbsp butter
1 8 oz Neufchâtel cream cheese
4 cup(s) Central Market Organics Chicken Broth
1 envelope Saco Mix ‘n Drink Instant Skim Milk
1 Tsp thyme
1 1/2 Tsp SabatinoTruffle & Salt (or more if desired)
1/2 Tsp black pepper, freshly ground

Instructions

Cut potatoes into large cubes and boil in salted water until very tender. Saltiness of water should be adjusted to suit taste.

While potatoes are cooking, in a separate saucepan heat butter, cream cheese, chicken broth, powdered milk and thyme together. Whisk together to soften and break up cream cheese.

Drain potatoes, mash and blend in warmed broth mixture. Add truffle salt and pepper, to taste.

Can be blended with a hand mixer or immersion blender for smoother soup.
