14 1/2 Oz H-E-B Diced Tomatoes with Green Chilies
2 cup(s) H-E-B Easy Melt Cheese Loaf, cut into 1-inch cubes
12 Oz H-E-B Fully Cooked Beef Fajita Strips
1/2 cup(s) green onions, sliced
1 non-stick cooking spray
10 H-E-B Flour Tortillas

Instructions

Drain diced tomatoes and save liquid.

Combine diced tomatoes and cheese cubes in large microwave safe bowl. Cover bowl with plastic wrap and microwave on medium power for 5-6 minutes, stirring once during the cook time. Stir the mixture to combine well.

Heat fajita strips according to package directions.

Add fajita strips, liquid from tomatoes and green onions to tomato cheese sauce and stir to coat all ingredients; set mixture aside.

Coat large skillet with non-stick cooking spray and heat over medium-high heat for 2 minutes.

Place 1 tortilla in hot skillet, spread 3/4 cup of fajita cheese mixture over tortilla and cook for 1 minute. Top with another tortilla and turn the quesadilla over and cook for 1 more minute or until cheese melts and tortillas are golden. Repeat with the remaining tortillas and fajita mixture.

Cut quesadillas into 4 wedges and arrange on platter. Serve hot
