Recipe makes 8 Servings

2 hot house cucumbers, unpeeled
1/2 cup(s) yellow bell pepper, finely chopped
2 Tbsp organic Italian parsley, minced
1/4 cup(s) H-E-B Sour Cream
1 Tbsp H-E-B Real Mayonnaise
2 Tsp Star White Wine Vinegar
1/8 Tsp kosher salt
1/8 Tsp H-E-B Ground Black Pepper
2 large greenhouse tomatoes, thinly sliced
2 green leaf lettuce

Instructions

Trim and discard ends from cucumbers. Slice cucumbers very thin on the slicing edge of a food grater.

Chop bell pepper finely.

Mince parsley.

Combine dressing ingredients in a medium bowl.

Toss cucumbers, bell pepper and parsley with dressing. Chill until ready to serve.

Right before serving, slice tomatoes.

Arrange lettuce leaves on a platter or on individual plates; lay tomato slices over lettuce.

Top with cold cucumber salad mixture and serve immediately.
