Chicken Salsa Quesadillas

Recipe makes 6 Servings

1 non-stick cooking spray
8 Oz H-E-B canned Chicken
1 cup(s) H-E-B medium salsa
8 Oz Jalapeño Jack cheese, shredded
12 yellow corn tortillas (flour tortillas can also be used)

Instructions

Heat oven to 450°F.

Line 2 baking sheets with foil, and spray with non-stick cooking spray.

Combine chicken, 1/4 cup salsa and cheese in small bowl, and set aside.

Place 3 tortillas on each sheet pan and spread 1/2 cup chicken mixture over each tortilla, then place tortillas on top.

Spray each tortilla top with non-stick spray and bake 5 minutes.

Remove from oven, turn quesadillas over and bake another 5 minutes until cheese is melted and tortillas are golden brown.

Remove from baking sheet, cut into wedges and serve with remaining salsa.
