Cheesy Egg Bites

Recipe makes 4 Servings

8 large eggs
1 Tbsp green or original tabasco
2 Tbsp green onions, finely chopped
8 Oz pre-sliced Monterey Jack cheese with Jalapeños
1 Oz smoked ham, cut into small pieces

Instructions

Preheat oven to 300ºF. In a bowl, mix together eggs, hot sauce, and green onions.

Lightly spray cups of a muffin tin (4 oz. cups) with spray oil. Lay a slice of cheese on top of alternating muffin cups to allow space for cheese to melt.

Place in oven for 1 minute (just long enough for cheese to soften enough to fall into muffin cups). Remove from oven.

Divide chopped ham pieces and egg mixture evenly among cups, tucking any melted cheese back over the eggs. Return to oven for 10 minutes.

Egg bites will puff up slightly and then fall as they cool. Allow to rest for 5 minutes before serving. The center will still be slightly soft, like the center of a poached egg. If a firmer texture is preferred, cook for 12 to 14 minutes.
