Bayou Brothers Green Gumbo

Recipe makes 6 Servings

2 Tbsp peanut oil
1 medium yellow onion, diced
2 medium green bell peppers, diced
2 stalks of celery, diced
4 fresh okra pods, diced
33 fl oz Bayou Brothers Gumbo Mix
1 cup(s) collard greens, chopped
1 cup(s) H-E-B Mustard Greens, chopped
1 cup(s) Swiss chard, chopped
1 Lb Argentine Red Shrimp

Instructions

Add peanut oil to a large stock pot and heat on medium for 1 to 2 minutes.

Add onions, bell peppers, celery, and okra and sauté until soft, about 3 minutes.

Pour gumbo mix into stock pot and stir to combine with vegetables.

Add greens to the pot and stir. Greens will cook down and soften.

Reduce heat to low, and let gumbo simmer for 80 minutes, stirring occasionally. Add shrimp and simmer 10 minutes more. Serve over white rice and enjoy!
