Recipe makes 4 Servings
1 large head of organic cauliflower, cut into small florets
1/3 cup(s) H-E-B Organics Extra Virgin Olive Oil, plus 1 tablespoon, divided
1 Tsp kosher salt
2 Tbsp whole almonds, toasted and chopped
1/4 cup(s) organic Parmesan cheese
2 H-E-B Organics Basil
2 organic garlic cloves

Preheat oven to 400ºF.

Toss cauliflower with 1 tablespoon olive oil and kosher salt.

Place cauliflower on sheet pan and roast 30 to 45 minutes or until cauliflower is fragrant and starting to brown.

To make pesto, combine 1/3 cup olive oil, almonds, Parmesan cheese, basil leaves and garlic in a food processor.

Remove cauliflower from oven and coat with a generous amount of pesto.
