Barbacoa Spiced Bacon and Avocado Mini Toast

Recipe makes 8 Servings

1 bakery fresh baguette
8 slices of bacon
1 Tsp Mi Tienda Barbacoa Seasoning
2 large Haas avocados, pits removed, flesh scooped out
1/4 cup(s) red onion, minced
1 garlic clove, minced
2 Tbsp lime juice, juiced
1 Tsp ground coriander

Instructions

Preheat oven to 350°F.

Cut baguette into 1/2 inch slices on a slight angle.

Place on a sheet pan and bake 10 to 12 minutes or until lightly toasted.

Place bacon onto a sheet pan lined with parchment paper and sprinkle with a little barbacoa seasoning.

Bake 30 to 40 minutes or until bacon is crispy. Drain off fat and cool bacon.

In a small bowl, combine avocados, onions, garlic, lime juice and coriander. Mix well and season as needed with more barbacoa seasoning.

Roughly crumble bacon into the avocado mixture and spread a spoonful of mixture on each toast. Serve immediately.
