Bacon Mushroom Swiss Brisket Burger

2 Tsp olive oil
8 Oz sliced mushrooms
3/4 cup(s) red onion, diced
2 .1000 Oz slices fully cooked bacon, chopped
4 brisket burgers
4 slices Swiss cheese
4 English muffins

Instructions

Preheat grill or grill pan to medium high. While grill is heating, heat a skillet over medium high.

Add oil and mushrooms to hot pan. Toss mushrooms with oil and cook for 4 to 5 minutes.

Add onions and cook for 2 minutes, then add bacon and toss to crisp bacon and combine flavors; remove from heat.

Cook burgers on grill for 4 to 5 minutes on each side depending on desired doneness. Add cheese when burger gets flipped over to second side.

While burger finishes cooking, toast English muffins.

To assemble burgers place burger on top of bottom of English muffin, spoon mushroom mixture over burger and top with remaining muffin.
