2 Lb boneless skinless chicken breasts, cut into 3/4-inch strips
3 Tbsp H-E-B Fat Free Sour Cream
1/2 Tsp Hill Country Fare Garlic Powder
1/4 Tsp paprika
1 Hill Country Fare Olive Oil Cooking Spray
1 cup(s) H-E-B Rice Squares, crushed
1/2 cup(s) Panko, Japanese bread crumbs
1/4 cup(s) Hill Country Fare Sliced Almonds
1/4 cup(s) H-E-B Grated Parmesan Cheese
1/8 Tsp salt
1/8 Tsp pepper
3 Tbsp H-E-B Dijon Mustard
3 Tbsp H-E-B Real Mayo
2 Tbsp H-E-B Honey
1 lemon, juiced

Instructions

Combine chicken tenders, sour cream, garlic powder and paprika in a zipper bag; refrigerate for 1 hour.

Heat oven to 400°F.

Line a baking sheet with foil, lightly spray with olive oil.

Combine rice squares, Panko, almonds and cheese in a shallow dish, set aside.

Add salt and pepper to tenders.

Coat with crumb coating on both sides.

Place on prepared baking sheet.

Lightly spray tenders with olive oil.

Bake tenders 15 minutes or until crisp and golden, internal temperature reaches 170°F.

To make dipping sauce combine mustard, mayo, honey, and lemon juice.
