Air Fryer Yucca Fries with Spicy Mango Ketchup

2 Lb yuca root
3 Tbsp olive oil, divided use
2 Tsp Mi Tienda Orange Pepper Seasoning
1 cup(s) yellow onions, medium diced
1 large garlic clove, peeled and rough chopped
1 medium habanero pepper, stem and seeds removed, rough chopped
1 cup(s) large mango, peeled and diced
1 1/2 Tsp salt
1/4 Tsp ground cinnamon
1/8 Tsp ground ginger
3 Tbsp light brown sugar
2 Tbsp red wine vinegar
1/3 cup(s) chili sauce

Fill a large pot with salted water and bring to a boil. Meanwhile, cut yuca into 3 to 4 inch pieces. Make a slice in the outer brown skin then peel the skin off with your fingers.

Add yuca to boiling water and cook until fork tender, about 20 minutes. Remove from water and set on plate to drain and cool.

Pull or cut yuca into large sticks to resemble fries. Trim the tough center core out of each piece and discard. Place yuca in a large bowl and toss with 2 tablespoons oil and Orange Pepper Seasoning. Set aside until ready to fry.

Place a large skillet over medium heat. When hot, add 1 tablespoon of oil, onions and garlic. Cook 3 to 4 minutes until onions begin to soften.

Add habanero pepper and cook 1 minute then add diced mangos. Stirring occasionally, cook 2 to 3 minutes until mango softens.

Add salt, cinnamon, ginger, and brown sugar and stir to combine.

Add vinegar and chili sauce, turn heat to low and cook 10 to 15 minutes, stirring frequently to prevent sticking and scorching.

Transfer to a blender or food processor and process until smooth. Place in refrigerator to chill.

Lay seasoned yuca fries in a single layer in air fryer basket. Cook on 400°F for 8 to 10 minutes or until fries are heated through and browned on the outside. Serve with chilled mango ketchup.
