2 1/2 cup(s) Texas Pure Milling Unbleached Baking Mix, divided use
1/2 cup(s) salted butter, cold and cut into cubes
3/4 cup(s) sugar, divided use
1/2 Tsp ground cinnamon
1 Tsp vanilla extract
3/4 cup(s) heavy cream, very cold, divided use
1 egg
10 Oz apple pie filling, chopped

Preheat oven to 450°F. Line a baking sheet with parchment paper and set aside.

In a large bowl, sift 2 cups of baking mix then add cubes of butter. Using a pastry blender or your hands, incorporate butter into flour until it has the texture of wet sand. Do not over work or completely break apart butter.

Add 1/2 cup sugar, cinnamon, vanilla, 1/2 cup cream, egg and chopped apples. Incorporate with your hands as much as possible.

Sprinkle remaining 1/2 cup of flour on surface and fold mixture onto flour. Fold mixture onto it's self 4 times or until mixture holds itself together. If necessary, use additional flour a tablespoon at a time.

Flatten dough into about an 1 to 2 inch thick circle and cut dough into 8 triangles.

Arrange scones on baking sheet, without touching, and brush with remaining cream and sprinkle with sugar. A more coarse sugar is great but you can use regular sugar as well.

Bake scones 18 to 20 minutes or until golden brown.
