How to Make Cranberry Pistachio Bread Pudding

H-E-B Chef Scott demonstrates how to make a delicious and rich dessert using H-E-B Cranberry Pistachio Bread.

To make cranberry pistachio bread pudding you will need the following items, available at H-E-B:
  • 9x13-inch or larger oven safe casserole dish
  • Large bowl
  • Whisk
  • Spatula (optional)
  • Oven mitt

Step-by-step Instructions

Step 1: Preheat oven and grease dish

Preheat oven to 350°F. Use butter to grease casserole dish and set aside.

 

Step 2: Prepare the bread

Cut loaves of H-E-B Cranberry Pistachio Bread into 1-inch cubes. Place the cubed bread into greased dish and use your hands to make the bread level, then set aside.

Step 3: Prepare the custard

Tip to scrape vanilla: Lay the vanilla bean flat on a cutting board and place the tip of the knife at the top of the vanilla bean. Pull the vanilla bean through the knife to cut in half. Then scrape both sides of the vanilla bean and add to large bowl.

 

Combine the vanilla bean with whole milk, eggs, heavy cream, spices and maple syrup. Use a whisk to thoroughly blend.

 

Step 4: Soak bread in custard

Pour custard over the cubed bread. Use your hands to mix all the ingredients in the dish. Press flat with your hands or a spatula so the bread pudding is even in the pan.

 

Let the bread pudding rest for 30-45 minutes for all of the bread to soak up the flavors of the custard.

Step 5: Bake the bread pudding

Place casserole dish in oven and bake for 50-60 minutes or until the center of the bread pudding is firm.

 

Step 6: Garnish the bread pudding

Using an oven mitt, remove the bread pudding. Place on a heat safe counter then garnish with powdered sugar. Serve warm and enjoy!
