Ingredients

Recipe makes 2 Servings

2 Tsp anchovy paste
1 Tbsp tahini paste
2 Tsp gochujang sauce
1 Tbsp fresh ginger, grated
2 Tsp lower sodium soy sauce

4 baby bok choy, quartered
1 pkg. Veggie Noodle Co. Zucchini Spirals (10.7 OZ)
1/4 cup(s) green onions, chopped
8 Oz shiitake mushrooms, sliced

Instructions

Combine anchovy paste, tahini, gochujang, ginger, and soy in a small bowl to make a paste.

Combine the paste with the broth.

Bring chicken broth to a simmer. Add bok choy to the liquid and simmer for 2 to 3 minutes then remove.

Divide zucchini noodles and bok choy among 2 bowls and ladle the broth over top.

Garnish soup with scallions and shiitake mushrooms. Serve immediately and enjoy!
