Ingredients

Recipe makes 12 Servings

2 cup(s) corn masa mix
1/4 cup(s) extra virgin olive oil
1 Tsp chili powder
1 Tsp kosher salt
12 Oz Helen's Kitchen Organic Veggie Carnitas
1 1/2 cup(s) Rosarita Vegetarian Refried Beans
2 roma tomato, chopped
2 cup(s) shredded lettuce
1 large Large Hass avocado, cut thin wedges

Instructions

Preheat the oven to 400°F.

Combine corn masa, water, olive oil, chili powder and salt in bowl. Knead a couple of minutes.

Place on a floured surface. Divide dough into 12 balls, place in a zipper bag to keep moist.

Press each ball between wax paper into a 4-6 inch diameter rounds.

Place on prepared baking sheet. Spray gorditas with non-stick spray on both sides. Bake 12-15 minutes or until golden.

Heat carnitas according to package directions.

In a small microwave dish, heat beans.

Fill each gordita with beans, veggie carnitas, tomato, lettuce and avocado.
