Ingredients

Recipe makes 6 Servings

1 Tbsp extra virgin olive oil
1 Lb lean ground beef
1 yellow onion, diced
1 green bell peppers, diced
1/2 Tsp kosher salt
1/4 Tsp black pepper
1 Tsp chili powder
1 bay leaf
1 Tsp cumin
15 Oz kidney beans, no salt added
15 Oz Mexican style tomatoes
13 Oz reduced sodium chicken broth
1 cup(s) tomato juice
1 Tsp Huy Fong Sriracha Hot Chili Sauce, optional

Instructions

Heat a large pot over High heat 2 minutes. Add oil and ground beef, and saute 5 minutes until liquid is gone and meat is browned.

Add onion, bell pepper, salt, black pepper, chili powder, bay leaf and cumin. Saute 3 more minutes.

Add beans, tomatoes, broth, and tomato juice. Bring to a boil, reduce heat to a simmer and cook 15 minutes. Add chili garlic sauce for a spicy version, if desired. For a richer flavor and thicker texture, simmer 1 hour.
