1/4 cup(s) extra virgin olive oil
1 1/2 cup(s) Hill Country Fare yellow Cornmeal
1/3 cup(s) wheat flour
2 Tsp baking powder
1 1/3 cup(s) Low Fat Cultured 1% Milkfat Buttermilk
1/3 cup(s) Hill Country Fare 0 Calorie Sweetener
1 Extra large egg, beaten

Instructions

Heat oven to 450°F.

Add 1 tablespoon olive oil to the cast iron fry pan and place in oven; heat for 10 minutes.

Meanwhile, combine remaining olive oil, cornmeal, flour, baking powder, buttermilk, sugar and egg in a mixing bowl.

Use a potholder to remove fry pan from oven. Pour cornbread batter into the hot pan and bake on center oven rack for 15 minutes or until lightly browned.

Cornbread is done when a toothpick inserted in the center comes out clean. Serve with your favorite salsa or butter.
