Spinach Fettuccine Alfredo

Ingredients

Recipe makes 5 Servings

2 cup(s) low fat milk
3 Oz low fat cream cheese
3 Tbsp flour
1 Tsp salt
1/2 Tbsp butter
3 garlic, crushed
2 cup(s) bunched spinach, chopped
1/3 cup(s) Parmesan cheese
12 Oz whole wheat fettuccine, cooked

Instructions

Place milk, cream cheese, flour and salt in a blender and blend until completely smooth.

Melt butter in a non-stick saucepan over medium-high heat. Add garlic and cook approximately 30 seconds.

Add in milk mixture and cook 3-4 minutes, stirring constantly until sauce comes to a low simmer.

Add chopped spinach and cook an additional 2 minutes.

Remove from heat and stir in Parmesan cheese.

Cover and let it stand 10 minutes before serving over cooked fettuccine.
