1 bunch radishes, cleaned and sliced thin, greens reserved and roughly chopped
2 cup(s) butternut squash, skin removed and peeled thinly with a vegetable peeler
1/4 cup(s) Four J Grilled Scallion Mustard
1 Tbsp honey
1 medium shallot, minced
2 Tbsp apple cider vinegar
1/2 Tsp salt
1/2 Tsp black pepper
3 Tbsp extra virgin olive oil

Instructions

In a bowl combine sliced radishes, butternut squash ribbons and radish greens and toss to combine.

In another bowl combine scallion mustard, honey, shallots, apple cider vinegar and salt and pepper. Add olive oil in a steady stream while whisking vigorously to form an emulsion with the other ingredients. Set aside to dress the salad.

Dress the salad with as much dressing as needed and season to taste with salt and fresh cracked pepper.
