2 cup(s) H-E-B Sweet Tomatoes, halved
1 cup(s) H-E-B Shredded Fat Free Mozzarella Cheese
1/2 cup(s) red onion, chopped
1/4 cup(s) basil, fresh, chopped
2 Tbsp H-E-B Extra Virgin Olive Oil
1/4 Tsp Central Market Organics Crushed Red Pepper
32 H-E-B Rice Multigrain Crackers

Instructions

Heat oven broiler to high. Set the oven rack in the middle.

Line baking sheet with foil and spray with nonstick olive oil spray.

Arrange tomato halves on baking sheet and spray with the non-stick olive oil spray.

Broil tomato slices for 10 minutes or until slightly brown and golden on edges, and cool.

Combine roasted tomato slices, mozzarella, red onion, basil, olive oil and crushed red pepper in a mixing bowl; toss lightly.

Spread 1 tablespoon Tomato Caprese mixture on each cracker and serve.
