Ingredients

Recipe makes 10 Servings

2 cup(s) whole wheat flour
1/2 Tsp salt
2 Tsp baking powder
2 Tbsp H-E-B Select Ingredients Baker's Scoop Cocoa
1/4 cup(s) brown sugar
2 eggs
1 Tsp vanilla extract
12 Oz beets, steamed then peeled and diced
1 cup(s) H-E-B Select Ingredients Whole Milk
2 Tbsp salted butter, melted

Instructions

Preheat griddle to medium-high heat.

In a large bowl combine flour, salt, baking powder and cocoa powder.

In a small bowl combine sugar, eggs and vanilla.

In blender combine beets and milk. Process until smooth.

Pour the beet mixture into the bowl with the sugar and egg mixture and combine. Next, transfer all the wet ingredients to the bowl with the dry ingredients. Mix just until incorporated.

Grease griddle with butter and pour approximately ¼ cup of batter onto the griddle. Cook for 3-4 minutes per side.

Dust with powder sugar or drizzle with maple syrup.
