3 Tbsp Extra virgin olive oil
1 cup(s) Carrots, diced small
1 cup(s) Celery stalks, diced small
1/2 cup(s) Shallots, chopped
4 Garlic cloves, minced
1 jar of Cosi Com'e Dried Tomatoes, drained
2 Tbsp Tomato paste
1 Lb Natural ground pork 90% lean
1 Lb Natural angus ground beef sirloin 90% lean
1 Tsp Kosher salt
1 McManis Family Vineyards Petite Sirah
1/2 cup(s) Prosciutto, diced into chunks
1 Central Market Vesuvio Pasta di Gragnano
1 cup(s) Grated Parmesan cheese, for topping and garnish
1 cup(s) Fresh basil, chopped for topping

In a large pot add olive oil and allow oil to get hot before adding carrots, celery, shallots and garlic. Stir-fry for 8-10 minutes until veggies are slightly colored and soft. Add drained tomatoes, tomato paste and stir-fry for another 2-3 minutes.

Add in the pork and beef, toss in a large pinch of salt and cook mixture for 10-15 minutes before adding in the whole bottle of wine and chopped prosciutto. Turn heat down to medium/low and cook covered for 1 hour.

While sauce is cooking cook pasta according to package instructions, drain and set aside. Once the bolognese is ready, spoon out the pasta into bowls, add sauce and garnish with cheese and chopped basil. Season to taste with salt and pepper as needed.
