Potato and Pea Samosas

1 Lb Simply Mashed Potatoes
2 Tsp Adams Reserve Garam Masala
2 Tbsp yellow onion, diced small
1/2 Tsp salt
1/2 Tsp ground black pepper
4 Oz fresh English peas, blanched and chilled
20 Wonton Wrappers
1/2 cup(s) Lotus Kitchen Tamarind Chutney
1/2 cup(s) Lotus Kitchen Cilantro Mint Chutney

In a large bowl, mix together potatoes, garam masala, onions, salt, and pepper until well combined.

Gently fold in peas. Place mixture in freezer for 5 minutes. Meanwhile, take out wonton wrappers and get a small dish of cold water.

Remove potato mix from freezer. Lay out 1 wonton wrapper and place a tablespoon of filling in the center. Dip a finger in the water and wet edges of wrapper. Fold edges up and press together to seal. Repeat with remaining wrappers.

In a heavy-bottomed deep pot, add oil to sufficiently submerge a samosa, approximately 3 to 4 inches. When oil reaches 350ºF, fry 2 to 3 samosas at a time for 2 to 3 minutes or until golden brown. Remove to a paper towel to drain and repeat with remaining samosas.

Serve with tamarind and cilantro chutneys for dipping on the side.
