16 Oz Central Market Whole Wheat Penne Pasta
2 Tsp H-E-B Extra Virgin Olive Oil
1 cup(s) zucchini, sliced thin
1 cup(s) shiitake mushrooms, sliced
1/2 cup(s) H-E-B Sundried Tomatoes, packed in oil, cut in half
1/2 cup(s) H-E-B Olives, sliced
1/4 cup(s) H-E-B Basil Pesto
1/4 cup(s) H-E-B Parmesan Cheese, shredded
2 Tbsp parsley, optional garnish

Cook pasta according to directions on package.

Meanwhile, coat a skillet with oil and saute zucchini and mushrooms over medium heat until tender. Add the tomatoes and olives.

When pasta is al dente, drain and transfer to the skillet with the veggies. Add the pesto and toss until all ingredients are well mixed and heated through.

Remove from heat. Plate and garnish with cheese and parsley.
