Orecchiette with Bacon and Tomato Sauce

Ingredients

Recipe makes 4 Servings

1 Lb orecchiette pasta
4 slices of Bacon, cut into 1/2-inch pieces
1 Tbsp Extra Virgin Olive Oil
1 medium red onion, thin sliced
2 fresh garlic cloves, minced
24 Oz marinara sauce
1/8 Tsp salt
1/8 Tsp Ground Black Pepper

Instructions

Cook bacon in olive oil over medium-high heat until browned and almost crisp.

Add onion to bacon and cook until soft, about 4 minutes.

Add minced garlic and stir until mixture is fragrant, about 1 minute.

Stir in marinara sauce, salt and pepper. Bring sauce to a boil, then simmer about 15 minutes until cooked and slightly reduced.

In a separate pot, cook pasta in salted water then drain but reserve 1 cup of cooking water for later use.

Pour the sauce and the cooking water over the pasta in a pot and return to stove top. Cook over medium-high heat until sauce thickens and is coating pasta, about 2 minutes.

Chef's note: Serve with grated Parmesan and chopped parsley.
