One-Pan Tri-Tip Beef with Sweet Potato Fries & Asparagus

2 Lb Tri-Tip Roast
1/4 cup(s) olive oil, divided use
10 Oz bag Sweet Potato Crinkle Cut Fries
6 Oz bag Asparagus Tips

Instructions

Preheat oven to 400°F.

Rub roast with 1 teaspoon olive oil, salt and pepper. Place on a sheet pan and bake 10 minutes.

Meanwhile, toss sweet potato fries and asparagus with remaining olive oil, salt and pepper.

Remove tri-tip from oven and add sweet potato fries and asparagus. Avoid overcrowding the pan.

Bake 20 more minutes or until tri-tip's internal temperature reaches 145°F and veggies are tender.
