One Pan Roasted Pork with Carrots and Apples

1/4 cup(s) Yellow mustard
1/4 cup(s) Extra virgin olive oil, plus as needed for drizzling
2 Tsp Kosher salt
1/2 Tsp Ground black pepper
2 Fresh rosemary
2 Garlic cloves, minced
1/4 cup(s) Pure honey
1 1/2 Lb Pork tenderloin
8 Carrots, peeled
1 large Granny Smith apples, cut into wedges
1 large Golden Delicious apple, cut into wedges

Instructions

Preheat oven to 400°F.

Place mustard, olive oil, salt, black pepper, rosemary, garlic and honey in a bowl and add pork. Coat pork completely and marinate about an hour.

Place carrots, apples and seasoned tenderloin on foil/parchment paper lined baking sheet. Lay rosemary sprigs over pork.

Drizzle olive oil evenly over carrots and apples and season with salt and pepper to taste.

Bake 30 minutes or until carrots and apples are browned and soft, and pork has an internal temperature of 145°F.

Allow pork to rest a few minutes before serving.
