Recipe makes 8 Servings

16 Oz dried navy beans
4 cloves, minced
1 1/2 cup(s) leeks, diced, white part only green tops discarded
1 cup(s) celery, chopped
1 cup(s) carrots, diced
2 9 Oz packages Red Spoon Crushed Tomatoes
2 bay leaves
2 fresh thyme sprigs
1 Tbsp dried oregano
1/4 cup(s) sherry vinegar
5 cup(s) chicken stock

In a large pot add dry beans and cover beans with water until water is at least 3-5 inches above beans. Cover and let sit in a cool spot to soak overnight (or at least 8 hours).

Once beans have soaked overnight, rinse and drain beans. Place beans in a crockpot and add all the remaining ingredients.

Set crockpot to lowest setting and cook for at least 8 hours or until beans are tender. Season with salt and pepper to taste. **This dish is fantastic served with fresh Pecorino Romano cheese grated over the top and served over pasta.
