Mahi Mahi with Warm Caponata

Ingredients

Recipe makes 4 Servings

1 small purple eggplant, cut into 1-inch pieces
1 red bell pepper, cut into 1-inch pieces
1 roma tomato, rough chopped
1/2 red onions, cut into 1-inch pieces
1 Tsp Italian seasoning
1 Tbsp olive oil
1 Tbsp H-E-B Balsamic Vinegar of Modena 2 Leaf
1 Lb mahi mahi
1/2 Tsp salt
1/2 Tsp black pepper

Instructions

Preheat oven at 400°F.

In a large bowl, combine the first 8 ingredients. Toss to coat with oil, vinegar, and herbs. Pour into a foil-lined baking dish.

Roast vegetables in the oven for 30 minutes, or until eggplant is tender and vegetables are brown around the edges.

Remove to a cutting board and rough chop vegetables. Return to bowl.

To make the mahi mahi, place fish on a foil-lined baking sheet. Sprinkle with salt and place, then place in the oven.

Roast mahi mahi for 10 to 15 minutes, or until fish is done.

Serve the fish with a heading spoonful of Caponata.
