16 Oz Central Market Gragnano Linguine
2 cup(s) Orti Di Calabria Tomato & Basil Sauce
4 large eggs, beaten together until pale yellow
1 cup(s) grated Parmesan cheese
1 Tsp kosher salt
1/3 cup(s) grapeseed oil

Instructions

Cook pasta according to package instructions. Drain pasta and mix in pasta sauce while hot, toss to combine and let sit in bowl while you prep other ingredients.

Mix eggs, cheese and salt into pasta and sauce and mix well to thoroughly coat everything.

Place 8-10" non-stick skillet over medium flame, add grapeseed oil and allow it to get hot. Once oil is hot pour pasta mixture into oil and quickly spread it evenly out in pan.

With a spatula flatten pasta out as best you can to make sure pasta has been evenly distributed in pan. Cook pasta 4-5 minutes before using a spatula to lift edges and see if it is browned and crispy.

Once pasta is browned and crispy carefully flip over in pan to finish cooking on other side. (Use a spatula and tongs if possible to avoid splashing hot oil.)

Once pasta is crispy and held together, transfer to a plate and allow to cool before cutting into slices with a pizza cutter or knife and serve warm.
