Ingredients

8 Oz whole wheat spaghetti
1 Tbsp lower sodium soy sauce
1 medium lime, juiced
2 Tbsp crunchy peanut butter
1 Tbsp rice wine vinegar
1 Tbsp Huy Fong Sriracha Hot Chili Sauce
1 Tbsp honey
1 cup(s) cucumber, seeded, peeled and diced
1/4 cup(s) cilantro, chopped
1/2 cup(s) green onions, chopped
1 cup(s) red bell pepper, sliced
2 cup(s) leftover chicken, shredded

Instructions

Cook pasta according to package directions. Strain and run under cold water to cool then drain thoroughly and set aside.

Mix soy, lime juice, peanut butter, vinegar, sriracha and honey in a medium bowl then whisk to combine.

Add all remaining ingredients in a large bowl then mix well to combine. Cover and refrigerate 20 minutes before serving.
