Heart-Shaped Ribeye with Herb Butter

1/4 cup(s) H-E-B Select Ingredients Reserve 100% Italian Extra Virgin Olive Oil, as needed for brushing on meat
2 Lb H-E-B Prime Heart Shaped Ribeye
4 Oz unsalted butter
1/4 cup(s) chives, thinly chopped
1 Tbsp H-E-B Organics Thyme, chopped
1/2 Tsp kosher salt

Set a cast iron skillet over medium heat and allow it to get very hot. Meanwhile prepare meat.

Brush olive oil over steak and season liberally with salt and cracked pepper. Allow to sit at room temperature for at least 20 minutes.

While steak is resting, place butter in a small saucepan and add chives, thyme and 1/2 teaspoon of salt. Melt butter over medium-low heat and cook until herbs are fragrant. Remove from heat and keep warm.

Place steak in the hot cast iron skillet and sear 5 to 7 minutes on one side or until steak is nicely marked.

Flip steak, reduce heat to low and continue to cook to your desired doneness, approximately 10 to 13 minutes for medium-rare.

Remove steak from heat and allow to rest at least 10 minutes. Drizzle warm herb butter over steak, and season to taste as needed. Garnish with a little more chopped chives if desired.
