Grilled Stuffed Zucchini Boats

Ingredients

Recipe makes 4 Servings

1 Tsp canola oil
1 Lb H-E-B Extra Lean Ground Beef
1 Tsp fajita seasoning
1 cup(s) H-E-B Medium Pico De Gallo
1/2 cup(s) shredded reduced-fat Monterey Jack cheese
2 large zucchini, cut lengthwise

Instructions

Heat oil in a heavy bottom skillet over medium heat 2 minutes.

Add beef and fajita seasoning and cook until browned; place in a bowl.

Combine pico de gallo and shredded cheese with beef, then set aside.

Using a teaspoon, scoop out seeds from each zucchini half; chop scooped out zucchini and mix into ground beef mixture.

Spray zucchini boats with nonstick spray and evenly stuff each zucchini boats with beef mixture.

Place skin side down on a baking sheet.

Spray a grilling rack or mesh with nonstick cooking spray.

Heat gas or charcoal grill to 400°F.

Place zucchini boats on rack and grill 15 minutes with lid down.
