Grilled Pork Chops with Cherry Plum Sauce

Ingredients

2 Tsp kosher salt, plus more as needed to taste
2 Tsp cracked black pepper, plus more as needed to taste
1 Tsp garlic powder
1 Tsp ground fennel
1 Tsp ground coriander
4 bone in pork chops
1 cup(s) cherry plums, diced small
1 1/2 Tbsp shallots, minced
1 cup(s) cherry juice
1/4 cup(s) H-E-B Balsamic Vinegar of Modena 3 Leaf
4 Tbsp unsalted butter

Preheat grill to 375ºF. Mix together salt, pepper, garlic powder, fennel and coriander. Season pork liberally with spice mix and let sit at room temperature for at least 30 minutes.

In a small stainless steel pot add plumcots, shallots, cherry juice, balsamic vinegar and a pinch of salt. Bring to a simmer and allow liquid to reduce by half, approximately 15 to 20 minutes.

Add butter, whisk to combine and bring to a boil then remove from heat, and set aside.

Spray grill liberally with non-stick cooking spray and grill pork chops for 4 to 6 minutes per side depending on thickness, over direct heat.

Next move chops to finish cooking over indirect heat until internal temperature reaches at least 150ºF.

Remove pork to serving dish to rest, reheat sauce until just hot and pour over pork, season to taste as needed.
