Grilled Chicken Thighs with Morita Chili Hummus

Ingredients

Recipe makes 6 Servings

1 1/2 Lb boneless, skinless chicken thighs, cubed in 1-inch pieces
1 medium lemon, zest only
1 Tbsp fresh oregano, chopped
1 Tsp kosher salt, plus more as needed
1 Tsp black pepper, plus more as needed
15 Oz garbanzo beans, rinsed and drained
2 cloves of garlic, smashed to release oils
1 Tbsp lime, juiced
1 1/2 Tbsp tahini
2 Tbsp Humble House Ancho & Morita Sauce
2 Tbsp extra virgin olive oil

Instructions

In a glass or plastic bowl, add chicken, lemon zest, oregano, salt and pepper. Toss to coat, cover with plastic wrap and marinate 30 minutes.

Meanwhile preheat grill to 375ºF.

To make hummus, combine garbanzo beans, garlic, lime juice, tahini, Ancho & Morita Sauce and olive oil in a food processor. Blend until smooth and creamy. Season to taste with salt and pepper as needed. Set aside.

Skewer chicken and grill 4 to 6 minutes per side depending on thickness, until internal temperature reaches 170ºF. Allow to rest.

Serve hummus on the side as a dip for the chicken. This is a great dish to serve on pita bread.
