Ingredients

9 medium tomatillos
2 cup(s) white onion, cut into larger pieces
2 serrano peppers
1 large jalapeño, seeded
1 cup(s) fennel, fronds only, tightly packed
2 bay leaves
1/2 cup(s) roasted salted pumpkin seeds
1 Tbsp toasted sesame seeds
5 peeled garlic cloves, approximately 1/4 cup
2 cup(s) cilantro, leaves only, loosely packed
1/4 Oz epazote, leaves only
2 cup(s) chicken stock

Instructions

Preheat oven to 400ºF.

Place tomatillos, onions, and peppers onto a sheet pan into an oven. Roast for 20 to 30 minutes until tomatillos are just browned.

Once tomatillo mixture is roasted remove from oven. Place mixture along with all remaining ingredients into a blender.

Blend until smooth, pour mixture into a medium size pot set over medium heat. Allow mixture to cook for 30 minutes at a low simmer.

Use sauce to smother over grilled chicken breasts or add to stew or use as a simmering sauce for anything.
