Recipe makes 8 Servings

1 head of cauliflower, trimmed into florets
2 small Yukon Gold potatoes, diced
1/3 cup(s) H-E-B Select Ingredients Reduced Sodium Chicken Broth
1 Tbsp Goya Chipotle Peppers in Adobo, minced
4 Tbsp Fage Total 0% Plain Greek Yogurt
1/4 Tsp salt
1/2 Tsp H-E-B Pure Ground Black Pepper
2 green onion(s), minced

Instructions

Bring a large pot of water to a rolling boil, then add cauliflower and potatoes and cook until soft enough to pierce with a fork; drain and return to pot.

Add chicken broth, and use a hand mixer to puree cauliflower and potatoes.

Mix in chipotle peppers, yogurt, salt and pepper; top with green onions to serve.
