1 Tbsp canola oil
2 cup(s) H-E-B Fajita Vegetable Blend, thawed on paper towels
2 Lb Central Market 93% Lean Ground Beef
1 Tsp H-E-B Texas Originals Beef Fajita Spice Blend
1/4 cup(s) Central Market Ground Flax Seed
1/4 cup(s) H-E-B Real Egg
1 cup(s) H-E-B Fresher Lasting Salsa Medium

Instructions

Heat oven to 350°F.

Spray 2 quart loaf pan with non-stick spray and set aside.

Heat heavy bottom skillet over high heat for 2 minutes. Add oil and fajita vegetables and stir-fry for 4 minutes or until onions are golden.

Combine fried fajita vegetables, ground beef, fajita seasoning, flax seed and Real Egg in large bowl (don't over mix).

Press meat mixture into prepared baking pan and bake on center oven rack for 35 minutes or until thermometer reads 170°F.

Cool meat loaf for 10 minutes before removing from baking dish.

Cut into 1-inch slices and serve with salsa.
