Crispy Smashed Potatoes with Pecorino

16 Oz H-E-B Frozen Baby Potatoes Italian Flavor
1/4 cup(s) vegetable or canola oil, plus more as needed for frying
2 Tbsp fresh chives, chopped fine
1/4 cup(s) Pecorino Romano cheese, grated

Instructions

Place frozen bag of potatoes in microwave and cook according to package instructions. Allow to cool.

While potatoes are cooling, preheat a large non-stick pan over medium-high heat.

Gently smash each potato flat, making sure they stay together and don't fall apart.

Add oil to hot pan. When oil is hot, add potatoes and fry 2 to 4 minutes per side or until nice and crisp on each side. Remove from pan to drain on paper towels.

Place on a serving plate, garnish with chopped chives and Pecorino Romano as desired.
