Cranberry Apple Chicken Salad

Ingredients

Recipe makes 8 Servings

1 1/2 Lb split breast
2 Tbsp olive oil, divided use
2 Tsp thyme, divided use
1/4 Tsp kosher salt
1/2 Tsp black pepper
1/4 cup(s) dried cranberries
1 fuji apple, chopped
1 Tbsp lemon juice
1/4 cup(s) walnuts, crushed
1/4 cup(s) red onion, diced
1 cup(s) arugula

Instructions

Preheat oven to 400°F.

Season chicken with oil, thyme, salt and pepper, then place on a sheet pan and put it in the oven.

Roast for 30 to 40 minutes.

Remove chicken from oven and let it rest until it is cool enough to handle.

Shred chicken into bite sized pieces.

Combine warm chicken with remaining ingredients. Toss well.

Serve warm or chilled with mixed greens, or crackers.
