4 eggs
1 Lb all purpose flour
1 1/2 cup(s) castor sugar
1 1/4 cup(s) Rustico Unfiltered Extra Virgin Olive Oil
1/2 cup(s) espresso coffee, brewed
1/2 Tbsp instant coffee powder

Instructions

Preheat oven to 350°F.

Using 2 small bowls, separate egg yolks from whites. Set aside.

In bowl with egg yolks, beat in flour, sugar and olive oil.

Add brewed coffee and coffee powder to dough with a spoon, then knead with hands about 5 minutes. Cover bowl with plastic wrap and chill 2 hours.

On a floured surface, roll dough out to 1/4-inch thickness. Cut with cookie cutter or use your hands to roll into 1-2-inch balls and flatten slightly.

Beat egg whites then brush on cookies.

Bake on cookie sheet 15 to 20 minutes.

Cool cookies on cookie sheet for few minutes then transfer to a wire rack to cool completely.
