Chorizo & Roasted Hatch Chili Con Queso

Ingredients

Recipe makes 22 Servings

1 Lb Dos Mamacitas Chorizo, crumbled
1/2 cup(s) white onions, diced small
2 garlic cloves, minced
5 roasted Hatch peppers, stems removed, seeds removed and diced
12 Oz pico de gallo
1 cup(s) heavy whipping cream
32 Oz H-E-B Easy Melt Cheese, cut into smaller cubes

Instructions

Set a large non-stick skillet over medium heat. Add chorizo, onions and garlic, and stir-fry until chorizo is fully cooked and crispy and onions and garlic are translucent or slightly caramelized. Drain off excess fat in pan.

In a large crock pot, add diced peppers, pico de gallo, sautéed onion and chorizo mixture, heavy cream and Easy Melt.

Set crock pot to high heat.

Stir often until cheese is fully melted and smooth. Turn crock pot down to low or warm setting for serving.

Serve with your favorite chips or veggies.
