Chipotle Adobo Pork Chops

Recipe makes 4 Servings

7 Oz chipotle peppers in adobo, sauce and peppers divided
2 garlic cloves
1/2 cup(s) white onion, coarsely chopped
1 lime, juiced and zested
4 boneless pork chops, 3/4-inch thick
1/2 Tsp kosher salt
1 Tsp ground black pepper
1 1/2 Tsp canola oil
4 Oz mango pico de gallo

Instructions

Combine 2 chipotle peppers, chipotle sauce, garlic, onion, lime juice and zest in a blender. Purée until smooth.

Season pork chops with salt and pepper, and rub with puréed chipotle adobo sauce on both sides.

Add canola oil to a grill pan (or a regular pan) over medium-high heat. Cook pork about 3 minutes on each side.

Serve with mango pico de gallo.
