Butter Braised Portobello Mushrooms

Recipe makes 8 Servings

1 loaf of ciabatta bread, thinly sliced into crostinis
2 cup(s) organic portobello mushrooms, thinly sliced
2 Tbsp fresh garlic, peeled and minced
2 Oz (4 Tbsp) unsalted butter, cubed small
1 Tbsp fresh thyme, chopped
1/2 cup(s) dry vermouth
1 Tsp kosher salt

Instructions

Preheat oven to 400ºF. Place slices of bread onto a sheet pan. Toast for about 12 - 15 minutes until crispy and stiff, enough to hold mushroom mixture.

In a glass oven-safe dish, place sliced mushrooms, garlic, butter, thyme, vermouth and salt. Toss to combine.

Cover dish with foil and bake for another 20 - 30 minutes until mushrooms are bubbly in sauce. Season to taste and spread softened mushrooms over crostini. Serve warm.
