Broccoli Tacos

Ingredients

Recipe makes 4 Servings

1/4 cup(s) extra virgin olive oil
1 Tsp cumin
3 cloves of garlic, minced or zested
16 Oz Cece's Veggie Noodle Co. Riced Broccoli
1 medium jalapeño, minced
12 Oz pico de gallo
2 Tbsp fresh lime juice
2 1/2 Oz La Tiara White Corn Taco Shells, as needed

Instructions

Place a large non-stick sauté pan or pot over medium heat. Add oil and allow to get hot, then add cumin and garlic.

Stir-fry until garlic just starts to color slightly, approximately 1 to 2 minutes. Add broccoli rice, jalapeño, and pico de gallo.

Continue to cook until liquid is evaporated. At this point turn off heat, season to taste with salt and pepper and stir in lime juice.

For serving, simply spoon broccoli mixture into taco shells and garnish with your favorite topping and salsa. Repeat as needed with additional tacos.
